Bacon Cheeseburger Roll-Up

Cheeseburger Roll-ups

Servings: 6
Prep Time: 25 minutes
Cooking Time: 50 minutes

Ingredients:
1 lb. lean ground beef
4 pieces of chopped bacon
1 small chopped onion
1/2 lb. (8 oz.) Velveeta Cheese, cut into 1/2-inch cubes
1 pkg. (13.8 oz.) refrigerated pizza crust (I used my homemade dough)

Directions:
Preheat oven to 400°F.
Brown ground beef with bacon and onions in large skillet on medium-high heat; drain.
Return meat mixture to skillet.
Add Velveeta; cook until melted, stirring frequently. Cool 10 min.
Roll out dough

Cheeseburger Roll-ups

Top with meat mixture.

Roll up and place them seam-side down.

Bake 20 to 25 min. or until golden brown.

Chicken Pizza-ola Sandwich

Food

Ingredients:
2 tbsp Olive oil
4 hoagies split
2 small chicken breasts
10-14 pieces of pepperoni
pizza sauce
1 1/2 cup of shredded mozzarella

Optional:
black olives
Banana peppers

Directions:
Preheat oven to 350.
Pour oil into pan and warm on medium.
Cut chicken into long strips and place in hot oil.
Cook until cooked through and brown.
While chicken is cooking, put about 2 tbsp of pizza sauce on each piece of bread.
Put enough pepperoni on bread to cover one side of bread.
On the other side cover with cheese.
When chicken is cooked place on sandwich.
Put other optional ingredients.
Heat in oven for about 15 minutes. Cover with foil to make sure bread doesn’t get too brown.

Homemade Pizza

Ingredients:
Fresh dough
1 jar of pizza sauce
3 cups of mozzarella cheese
2 cups of italian sausage

Directions:
Preheat oven to 400.
Roll out dough.
Brown sausage. I usually send the cooked sausage through the food processor.
Place on pizza pan after spraying with non-stick spray.
Pour sauce on pizza and spread evenly with spoon.
Spread about a cup of cheese over sauce.
Spread about the sausage over the pizza.
Spread the rest of the cheese evenly.
Bake for about 30 minutes.

Chicken in Bacon

Chicken in Bacon

Servings: 4
Prep Time: 20 Minutes
Cook Time: 30 minutes
Ready In: 50 minutes

Ingredients
4 chicken breasts (boneless)
8 pieces of bacon
1 medium onion
1 small green bell pepper
7 oz. can of Green Mexican Salsa
4 pieces of Monterey jack cheese

Directions
1. Preheat oven to 400 degrees.
2. Cook bacon until cooked through. Don’t get to crispy or you won’t be able to wrap your chicken.
3. While you’re cooking the bacon prepare your chicken by cutting off any fat.
4. Cut the onion and bell pepper into long strips.

5. Once the bacon is cooked, drain the grease and place on paper towel.
6. Place 2 strips of onion and 2 strips of green bell pepper on your chicken. Then wrap the bacon around the chicken and secure with a toothpick.
7. Pour jalapeño juice over chicken breasts.

8. Place in oven and cook for 30 minutes.
9. When you have about 5 minutes left take chicken out. Carefully pull out the toothpicks and place a piece of cheese over each piece of chicken.

Stuffed Shells

Stuffed Shells

Servings: 8
Prep Time: 30 Minutes
Cook Time: 30 Minutes
Ready In: 1 Hour

Ingredients
1 (16 ounce) package uncooked large pasta shells
1 pound mozzarella cheese, shredded
1 (15 ounce) container ricotta cheese or cottage cheese (for less fat)
1 lb. of meat (hamburger meat/Italian sausage)
2 cups grated Parmesan cheese
1 (28 ounce) jar pasta sauce (I make my own sauce.)

Directions
1. Bring a large pot of lightly salted water to a boil. Cook shells for 5 to 8 minutes, or until just slightly underdone; drain and rinse.
2. Brown meat.
3. In a large mixing bowl, mix together grated cheese, ricotta/cottage cheese, meat, and 1 cup Parmesan cheese.
4. In your baking pan, spread 2 table spoons of sauce on the bottom of a 13×9 pan instead of grease.
5. Take a pasta shell and place on tablespoonful of cheese/meat mixture. Place it in the pan. Do that with all the shells. Then spread about 1/2 of the sauce on top. (I heat up the other 1/2 of the sauce to place noodles after cooking.)
6. Sprinkle the rest of the cheese over the dish.
7. Bake in a preheated 350 degree F (175 degree C) oven for 30 min, or until hot and bubbly.

Chicken Cordon Bleu

Cooking Time: 35 minutes

Ingredients:
4 skinless, boneless chicken breast halves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
6 slices Swiss cheese or Pepper Jack for some spiciness
4 slices cooked ham
1 egg
1 cup seasoned bread crumbs

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Coat a 7×11 inch baking dish with nonstick cooking spray.

2. Split chicken breast, fold open, and pound chicken breasts to 1/4 inch thickness.

3. Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Fold each breast, and secure with a toothpick if necessary.

4. Dip breast into egg and then roll in bread crumbs until covered evenly.

4. Bake for 30 to 35 minutes, or until chicken is no longer pink. Let chicken sit for a few minutes before serving.

Sausage Balls

Here they are before being cooked, bagged, or frozen.

This is recipe has been a recipe that my Grandfather started making when my Uncle’s wife at the time made them for the family. He tweaked the recipe a bit through the years. We made them every Christmas. I’ve continued the tradition. They go so quickly so this time I doubled the recipe! :-)

Servings: 80 (depending on size)
Prep Time: 30 minutes
Cooking Time: 15 minutes

Ingredients:
1 pound of regular sausage
1 pound of HOT sausage
2 cups of Cheddar cheese
2 cups of sharp cheddar cheese
1 1/2 cups of Bisquick

Ziplock bags

Directions:
Kneed all of these things together until it’s a uniform mixture. Roll into balls a little smaller than golf ball size. Place a serving into each ziplock bag. I put 10-15 in each. Place them in freezer until your ready to serve. Preheat oven to 375. Cook for about 15 minutes or until golden brown.

Bacon Appetizer Crescents

Servings: 8 doz. or 24 servings, four crescents each
Prep Time: 30 minutes
Cooking Time: 15 minutes

Ingredients:
1 pkg. (8 oz.) Cream Cheese, softened
8 slices Bacon, crisply cooked, crumbled
1/3 cup 100% Grated Parmesan Cheese
1/4 cup finely chopped onion
2 Tbsp. chopped fresh parsley
1 Tbsp. milk
2 cans (8 oz. each) refrigerated crescent dinner rolls

Directions:
1. Preheat oven to 375°F. Mix cream cheese, bacon, Parmesan cheese, onions, parsley and milk until well blended; set aside.
2. Seperate each can of dough into four rectangles; firmly press perforations together to seal. Spread each rectangle with 2 rounded tablespoonfuls of the cream cheese mixture.
3. Cut each rectangle into 12 wedges. Roll up wedges, starting at short ends. Place, seam-sides down, on greased baking sheet.
4. Bake 12 to 15 min. or until golden brown. Serve warm.

–Substitute
Prepare as directed, using Cream Cheese, 1/3 Less Fat than Cream Cheese.

–Jazz It Up
Sprinkle lightly with poppy seed before baking.

Ingredients

Jambalaya (to be cooked outside on open flame)

Servings: 8

Ingredients:
2 lbs. boneless, skinless chicken breasts
2 lbs. pork
1 lb. sausage
1/2 lbs. hot sausage
1 qt. cut green onions
4 cups of rice
48 oz. water
4 tspn salt

Directions:
1. Cut pork and chicken in mouth-size chunks, & slice sausage. Salt pork and chicken.
2. In an iron pot, fry sausage, take out, fry pork in the same grease.
3. When done take out and put chicken. If pork did not produce enough oil, add some vegetable oil.
4. When chicken is done, add other meat with onions. Stir well and when meat begins to fry add water and rice and return to boil. Stir well and put lid on. Rake all flames under pot. Just leave hot coals to cook rice for 20 minutes.

HINT:
1/2 cup of rice per person; 1 cup water and 1 tspn. of salt per 1/2 cup rice.
