Ingredients:
3 cups of mashed sweet potatoes
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup milk
1/2 cup margarine, melted
dash of cinnamon

Topping:
1/2 cup flour
1 cup chopped pecans
1/2 cup brown sugar
1/3 cup margarine – slightly softened

Directions:
I start by putting sweet potatoes in food processor to ensure there’s no big chunks of potatoes.
Mix together with other ingredients.
Pour in 8×12 or 9×13 inch casserole dish after spraying non-stick spray to ensure easy clean up.

For topping:
Mix together pecans, sugar, & flour until mixed well then add in butter and stir.
Sprinkle on top.
Bake at 350 for 30 minutes.

Christmas Food


I am reposting this so it will come up the top of blog entries for Kelly’s Korner Show Us Your Life entry. This is one of my favorite recipes. I do it or some variation of it nearly ever Christmas. It’s easy and yummy.

Servings: 36
Prep Time: 15 Minutes
Cook Time: 35 Minutes
Ready In: 50 Minutes

Ingredients:
2 cups all-purpose flour
1/4 cup packed brown sugar
1/2 cup butter
1 1/2 cups chopped pecans
1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
3 eggs, beaten
2 tablespoons lemon juice from concentrate

Directions:
1. Preheat oven to 350 degrees F. In medium-sized bowl, combine flour and brown sugar; cut in butter until crumbly.
2. Press mixture on bottom of ungreased 13×9-inch baking pan. Bake 10 minutes.
3. Meanwhile, combine pecans, condensed milk, eggs and lemon juice; pour over crust. Bake 25 minutes or until filling is set.
4. Cool. Cut into bars. Store covered at room temperature.

Chocolate Peanut Butter Balls

Servings: about 48 balls
Prep Time: 20 minutes
Cooking Time: 0

Ingredients:
2 cups peanut butter (smooth or crunchy)
1/2 cup butter
4 cups confectioners’ sugar
3 cups crisp rice cereal
1 teaspoon vanilla
2 cups semisweet chocolate chips

Directions:
1. Melt peanut butter and butter in saucepan, over low heat. In large bowl, mix crispy rice cereal and confectioners’ sugar well. Pour melted peanut butter and butter over cereal and sugar and blend together thoroughly.
2. Form into 1 inch or smaller balls, spread on cookie sheets, chill till firm in refrigerator (over night is okay).
3. Melt chocolate in double boiler and keep melted while working with balls. A teaspoon is best to use in dipping the balls in chocolate. Dip good and place on cookie sheet. As you dip them place them back on cookie sheet and keep chilled till firm.

Easy Chili

Chili & cornbread

Servings: 4
Prep Time: 5 minutes
Cooking Time: 35 minutes

Ingredients:
2 pounds ground chuck
1 onions finely chopped
2 tbsp chili powder
1 tsp of ground red pepper
1 tsp of garlic powder
1 cup of corn starch
1 envelope taco seasoning or 1/4 cup taco seasoning
1 can of kidney beans/chili beans (drained)
2-3 cups of Mexican shredded cheese.

Directions:
Brown the meat.
Put the onion in the food processor to ensure there are no large chunks.
When meat is brown, drain off grease and put in the food processor. Do a quick chop.
Pour back into the pan.
Add about a cup of water to the food processor container to get out the remnants of onion and meat.
Add all other ingredients except corn starch.
Make sure all spices are spread evenly and then add 1 1/2 cups of water.
Simmer for about 15 minutes.
Add corn starch to help in the thickening process.
Simmer for about 20 more minutes and stir occasionally.
Scoop into bowls and add cheese.

Carne Asada Marinade

Cooking Time: 20 minutes

Ingredients:
1 – 1 1/2 lbs of flank steak
1/3 cup vinegar
1/2 cup soy sauce
1/2 cup olive oil
1 tsp cumin
1-2 tsp black pepper
1 tsp garlic powder
1 tsp paprika
1 tsp onion powder
1 1/2 tsp oregano
1 lime, juiced
1/4 cup brown sugar, packed
1 tbsp of minced garlic
1 1/2 tsp. chile powder
1 jalapeno, seeded, and minced
3/4 tsp. sea salt

Directions:
In a gallon size Ziploc bag, combine all ingredients with flank steak and mix really well. Let marinade for about 6 hours. Cook on grill.

Here’s some steak that was marinated in this marinade and was cut for fajitas and I added in some caramelized onions.

Homemade Pizza

Cooking Time: 30 minutes

Ingredients:
Fresh dough
1 jar of pizza sauce
3 cups of mozzarella cheese
2 cups of italian sausage

Directions:
Preheat oven to 400.
Roll out dough.
Brown sausage. I usually send the cooked sausage through the food processor.
Place on pizza pan after spraying with non-stick spray.
Pour sauce on pizza and spread evenly with spoon.
Spread about a cup of cheese over sauce.
Spread about the sausage over the pizza.
Spread the rest of the cheese evenly.
Bake for about 30 minutes.

Pizza Dough

Cooking Time: none

Ingredients:
8 oz. water
3/4 tsp salt
2 tsp olive oil
2 1/2 cups of flour
2 tsp sugar
2 tsp active dry yeast

Directions:
Place ingredients in bread machine in order listed.
Remember not to get your yeast wet in the process.
Put on Dough setting and press start.
After dough is done making, roll out, and finish making pizza.

Apple Cider Cinnamon Bread {Bread Machine}

I made homemade bread as part of my contribution to Thanksgiving this year. Above you will see a picture of this bread that I made. I’m not sure what happens to my bread sometimes, but I seem to get a stumpy looking loaf! My only guesses are that I either used some old yeast or the yeast got wet too early. If you have any pointers to help with this, it would be great! About every other time I make bread using the machine, they turn out stumpy and too dense!

Prep Time: 10 minutes
Cooking Time: about 2 hours 40 minutes (depending on bread machine)

Ingredients:
2 1/4 teaspoons active dry yeast
3 cups bread flour
1 teaspoon cinnamon
2 tablespoons brown sugar
2 tablespoons butter
1 teaspoon salt
1 1/4 cups apple cider

Directions:
Put in bread baking pan per manufacturer’s directions and bake.
Use light crust setting.

Potato soup

Prep Time: 10 minutes
Cooking Time: 5 and half hours

Ingredients:
5 pounds russet baking potatoes, peeled and cut into 1 inch cubes
1/2 cup sour cream
1/2 cup butter
1 cup half and half
8 ounces bacon, cooked until crisp, drained on paper towels, and crumbled
6 green onions, chopped
Salt and freshly ground pepper to taste
1 tablespoon Tabasco sauce
1/2 cup fresh chives, chopped
1/2 cup fresh parsley, chopped
16 ounces Velveeta cheese, melted

Directions:
1. Put the potatoes in the crock pot and add water to cover. Cover and cook on HIGH for about 5 hours, potatoes should be falling apart.
2. Turn the cooker to LOW, add the butter, half and half, and sour cream, and season with salt and pepper. Cover and cook until hot, about 20 minutes.
3. Stir in the crumbled bacon and sliced green onions. Serve immediately or keep warm on LOW, adding milk to thin if needed.

Cook Time: 40 minutes
Ready In: 50 minutes

Ingredients
3 potatoes
1/3 cup Olive oil
2 tbs Dried Onion
1/3 cup All season salt
1 tsp paprika
1 tsp “Slap Your Momma”
1 tsp salt
1 tsp pepper
5 finally chopped jalapeños (optional)

Directions
1. Preheat oven to 400 degrees.

2. Chop potatoes in to square bite size pieces.
3. Place in bowl.
