
When looking at the menu this week, I realized I’m on a rice kick! Rice is such a versatile side…Not always great for those counting carbs, but with my growing boys, it doesn’t phase them. Parboiled rice is my go to rice. I don’t buy anything else.

Margarita Chicken with Rice Pilaf

Wednesday: Dorito Casserole

Thursday: Garlic Chicken with these Green Beans

Friday: Low Fat Garlic Honey Marinaded Pork with fried rice or baked beans depending on the type of meal your going for.

Rice is one of my favorite side dishes. It’s so versatile and goes from sweet to spicy to savory. I heart rice! 😉
